Pavakkai poriyal/Bitter gourd stirfry

Method
Pavakkai/Bitter gourd 250 gms
1large onion chopped
2 slitted green chilli
1 string of curry leaves 
2 tomatoes chopped 
Oil as needed
Salt as need
Mustard seeds1/4tsp
Channa dal 1/2tbsp
1/4tsp of turmeric powder 
1/2tbsp of chilli powder 
 coriander leaves

Ingredients 

Cut the Pavakkai into small thinly sliced pieces. Heat oil in a kadai. Add the chopped Veggies. Fry well in oil for 5 minutes. Take in a bowl and keep aside
Heat oil in a kadai. Add the mustard seeds and channadal fry well. Add the chopped onions with greenchilli and curry leaves. Sauté well.
Add the fried veggies into the mixture. Mix well
Add salt to taste
Add 1/4tbsp of turmeric powder
Add 1/2tbsp of chilli powder 
Once the masala gets coated well with the Veggies. Add the chopped tomatoes. Cook until it turns mushy and combines well. It takes around 5 to 6 minutes
Once oil starts to oozes out. Switch off the flame with coriander leaves.

Senakilangu varuval(Elepant yam Roast) Ingredients : Senakilangu 250gms Oil as needed Mustard seeds for tempering Ginger garlic paste 1tbsp Salt as needed Chilli powder 1tbsp Turmeric powder 1/4tsp Preparation: First remove the outer layer of the yam. While cleaning it apply little oil to hands so that it won't create itchiness.  Cut into cubes. Add the cubes in a bowl of water with turmeric powder and salt. Boil for about 8 minutes. So that I will be 90% cooked. Switch off the flame and strain the.cubes to another bowl.   Heat oil in kadai, add mustard seeds when it splutters add curry leaves and gg paste.cook until raw smell goes off. Add the strained cubes with the chilli powder and salt as needed.  Fry in low flame. Until it turns Crispy out.  It goes well with sambar sadham, rasam sadham and best with creamy curd rice.
