Ingredients
250grams of brinjal
1large onion
2 tomato
2 greenchilli
Oils as needed
Salt as needed
1/2tbsp of mustard seeds
1/2tbsp of channa dal
1 string of curry leaves
1/2tbsp of turmeric powdee
1tbsp of chilli powder
Lemon sized tamarind
Small piece of jaggery
METHOD
Heat oil in a kadai. Add the mustard seeds and channa dal to fry. Add the chopped onions.

One string of curry leaves. Sauté well until onions get cooked
Add the cut brinjal. Soak in water so that color won't get darkens
Add 1/2tbsp of turmeric powder
1 tbsp of chilli powder. Adjust the spice level according to your taste
Add 1 tbsp of sambar powder
Salt to taste
Fry well. Until the powders gets cooked well. Fry in low flame until its half done
Add the tomato pureed in mixie
Cooked well until the raw smell of tomato goes
Soak the tamarind in water. Extract the juice and add the brinjal
Mix well until it combines well. Add little jaggery to balance the taste. Cook well until oil oozes out from the thokku.
Yummy brinjal thokku is ready
